In preparation for Girl's camp on Monday I wanted to make one of the big dinner's ahead of time and freeze it so it would be done. It was Mexican lasagna- 30 pans of it! My wonderful and amazing friend Mary came over to help me. We started at 9:30 and finished at 3 p.m. I don't know what I would have done with her. It took us 5 1/2 hours. I would only be half-way done by now. At this point, I'm not sure I want to eat any of it. My house smells like onions! The mad dash is on to get everything ready for camp. Just when I think I have everything I remember that I don't. Luckily there is a Walmart about a half an hour away from camp if I really get desperate! My living room is packed full and my garage as well. I don't think I will sleep much tonight. I am taking a couple of hours off to take Mary on a girl's night out! She is going to camp too. We need a fun little re-charge before we don't get any sleep for a week. I am excited to share this with Kaeli- it's her first year to go to camp! It makes the 120 cans I had to open worth it!

Wow, Corrine! Quite a task. I helped make that for camp one year. (Not that many though)...Hope you have a great time. Wish you would have called me. I could have put some of them together for you!
